Recipe: Gallo Guacamole

Living with a family who loves to entertain, chips and dip are a weekend staple in my house.
Whether it’s a family party or just friends over, my house is always crowded. As the Costco bill kept climbing from the weekly guacamole buys, I decided to try my hand at making my own. Sometimes I doused it with too much salt, other times, not enough.
I keep on trying – probably around 5 more times – and my trial and error process paid off. The perfect “Mia Gallo Guacamole” recipe was born.
After seeing my family’s reactions when they tasted it, I knew that I had mastered the perfect melody of flavors. My sister, Ava, 12, the pickiest eater in the house, grabbed a chip and dove in. Her eyes widened with delight as she took the first bite.
If you try to make this dish, beware. The fine dicing of the different components is tedious and tends to take a while. I also often find myself wearing goggles to prevent onion-induced tears.
Being able to bring the people I love together through food is something I’m thankful to avocados everywhere for.
Ingredients:
- 4 avocados
- 15 seeded grape tomatoes
- ½ of a yellow onion
- ½ tablespoon of salt
- Juice of half of a lime
- A pinch of pepper
Directions:
- Cut open the avocados and put all eight halves into a bowl.
- Slice all of the grape tomatoes in half and scoop the insides out. Then dice up the rest of the tomatoes.
- Peel the skin off of the yellow onion and dice up half of it.
- Put the tomatoes and the onions in the bowl with the avocado halves.
- Usa a fork to mash it all up.
- Add the salt, pepper and lime juice.
- Mix it all up and serve!
