As I walked through Whole Foods the other night, my sister excitedly showed me a display of peanut butter sandwich cookies. Immediately, we both were brought back to the days where we would spend hours baking and playing around in the kitchen with our mom. The cookies had been a family favorite for as long as we could remember.

Sadly, with the busy schedules my family has adapted over the past few years, the cookies have become more of a rare treat rather than an every weekend snack.

However, seeing the cookies reminded my sister and I of how much fun we used to have baking, and how much our family used to enjoy the treats. We were inspired to make them again, and planned to make time for baking during the upcoming weekend.

In our excitement, we also ended up buying the cookies at the store, and although they weren’t quite as good as the homemade ones we were used to, they were a pretty close second.

 

Ingredients:

  • ½ cup unsalted butter, softened (1 stick)
  • ½ crunchy peanut butter
  • ½ cup sugar
  • ¼ cup light brown sugar
  • ½ tsp vanilla extract
  • 1 egg
  • ¾ cup all purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp sea salt

Icing:

  • ½ cup butter, softened (1 stick)
  • ½ cup creamy peanut butter
  • 1 cup confectioners sugar
  • 1 tbsp heavy whipping cream

Directions:

  1. Cream together peanut butter and butter.
  2. Add brown sugar, granulated sugar and vanilla.
  3. Add egg.
  4. Add dry ingredients.
  5. Bake.

For the icing:

  1. Cream together peanut butter and butter
  2. Add powdered sugar
  3. Add heavy whipping cream
